I may have to ask you how you get the words on knob labels to kind of wrap around like that. Where in Illustrator might that function reside?

Bingo.  Make a circle, then put text on it.  I seem to remember having problems with the text only wanting to go in one direction, and I do not recall how I dealt with that, or if it was even with this pedal in particular that it happened...
