Me again...
-I got bypass signal.
-When I touch 1 and 2 on the Board or the Connection on the Bypass switch, I can hear the ticking of the Sample and Hold.
-The Sample and Hold light is blinking and changing rate with the Speed pot
-No Voltage on Q3. Where should I look for the mistake?
-I painted the voltages on the layout. On some pins there were jumps of voltages, I guess it's got something to do with the S/H-Speed

Alright, changed Q3 and now it seems to work 
So I guess transistors and diodes should always be bought in doubles
