Um. I know it's easy - but how do I accomplish this:

Basically, you wire it the same as usual, just leave out the LED pole.

Basically, you need to hook up the white wire path on one side of the DPDT. In from one jack on one side's the middle lug, the out to the other jack on the other side's middle lug. Small jumper on one end of the switch from one side to the other. On the other end, you need to go from the input side of the switch to the input of the board. Then you go from the output of the board to the only remaining lug.
Power jack connects straight to the board's 9V in, ground from the board connects to the DC Jack's Ground and at least one of the jack's.
One downside to this is that you do not have your board's input grounded when the effect is bypassed. If you end up with problems, you might need to find an alternate way of switching, but this should work most of the time.
